Raspberry rolls


Children loves it, and it takes no time and almost no money to make them: Let me present you today the delicious Raspeberry rolls !

Ingredients:

  • 100g Flour
  • 100g fine Sugar
  • 1 jar of Raspberry jam
  • 4 yogs
  • 3 white eggs whipped

Preparation:

Separate the yolks from egg whites in two different bowls. Reserve the whites.

In a bowl, beat 4 egg yolks mixed with sugar. Gradually add flour while continuing to stir and mix the preparation.

In the other bowl, beat the 3 eggs whites using a whisk or a food processor.

Gently add the egg whites to the mixture of egg yolks, sugar, flour. Mix gently until you get a smooth dough.

Preheat oven at 210° C.

Place baking paper on an oven tray. Then spread the dough on the paper to form a rectangle, then place the tray in the oven and cook during 10 minutes.

When cooked, check with the tip of a knife if the dough is ready, the tip of the knife must come out clean.

Remove the dough from the oven and return it to a clean surface.

Spread raspberry jam and roll the dough on itself.

Apple Crumble Pie Recipe - Step by Step

Apple Crumble Pie


It is so easy to prepare an apple crumble pie, why dont you try this recipe? Just make sure you use granny apples because they will bring a sour taste to your pie which will balance very well with the sweetness of the crumble dough.


Ingredients for the crumble dough:

  • 125g flour
  • 125g sugar
  • 100g butter


Ingredients for the Apple filling:

  • 4 granny apples
  • 1 tea spoon cinnamon
  • 1/2 tea spoon dry ginger pulver
  • 1 dl sugar

Preparation:



Mix flour, sugar and butterStep 1
Preheat oven at 200°C. Add flour, sugar and butter into a bowl.

Prepare the crumble dough by mixing flour with sugar and butter in small pieces until you obtain a crumble mixture.

Remove skin from granny apples, take the seeds out and cut apples in small pieces (2 cm long). Take a new bowl and mix the apples with 1dl sugar, the cinnamon and the ginger.

Rhubarb crumble pie


Sweet and sour, crunchy and soft, this contrast is a great opportunity to experience the spring in your kitchen. Without too much difficulties and too much time, this dessert brings a lot of pleasure.


Ingredients for the crumble dough:

  • 125g flour
  • 125g sugar
  • 100g butter

Ingredients for the rhubarb filling:

  • 1 bunch of rhubarbs (around 10 stalks)
  • 1 tea spoon cinnamon
  • 1/2 tea spoon dry ginger pulver
  • 1 dl sugar



Preparation:
Preheat oven at 200°C.

Prepare the crumble dough by mixing flour with sugar and butter in small pieces until you obtain a crumble mixture.

Remove the leaves part away from the stalks, then wash and cut rhubarb in small pieces (2-3 cm long).

Mix the rhubarb pieces with 1dl sugar, the cinnamon and the ginger. Put rhubarb in a pie form and cover with the crumble mixture.

Place the form in the oven and cook for 25 minutes.

Then let the pie cool down and serve with crême fraiche or lightly whipped cream.

Pancake served with vanilla ice cream and fresh strawberries


Spring is at the balcony and to celebrate it, we have cooked pancakes using our pancake dough recipe, and served pancakes with some vanilla ice cream and fresh strawberries. Delicious!

The lemon tart

Yesterday, I explained to you how to prepare a shortbread dough that is commonly used for the preparation of tarts. Today we will go one step further and use this shortbread dough to make a lemon tart !

My love for lemon tarts is a long story, I remember it from my very very young age when my mother was baking this wonderful dessert. This can tell you, how much I was looking forward to write this post. The lemon tart is a relatively simple dessert to prepare unless you go for the lemon tart toped with meringues ... But as I do not really like the lemon tart with meringues, we will go for the simple method.


  • 1 shortbread dough (recipe)
  • 75 cl melted butter
  • 4 citron
  • 4 eggs
  • 315g sugar
  • 125 cl water

Warm up oven to 200°.

Use one spoon of butter to cover the entire tart form to avoid the bound to stick during the the cooking.

Take the shortbread dough you have prepared from the fridge and let it breath at room temperature for 10 minutes.

Roll the dough with a roll-pin to form a circle of 30 cm in diameter and 3 mm thick. Place the dough inside the tart form. Make plenty of holes with a fork and place a baking paper on top of the dough that you will cover with dry beans. Dry beans will keep the tart bound flat during cooking and place it in the oven for 15 minutes.

During those 15 minutes of cooking time, prepare the lemon curd by making a zest with the four lemons and prepare 125cl of lemon juice. Whip lemon juice, lemon zest and eggs together in a bowl. Add sugar and whip ferm, then blend 75cl of melted butter inside.

When the tart bound is half-cooked (15 minutes cooking) , take it out from the oven, remove the baking paper and the dry beans. Add the lemon curd inside the tart and put the whole back in the oven for 20 minutes.

When the tart is cooked, let it cool down several hours before eating.
